BROWNIES

Hello!

How do I stay cool in this HOT weather (with no airconditioner)...bake brownies of coarse!!! (what was I thinking!).

I found this recipe in one of my Good Housekeeping magazines (my gave me a gift subscription a while back). It's easy and uses cocoa instead of chocolate which I prefer. I probably shared this recipe before but here it is again...for those new to my blog.


As I write this the brownies are almost all gone!!! It's a small batch but I doubled it a few times and it turned out great.


I chopped up some semi sweet chocolate and scattered them on top....you can NEVER have enough chocolate!!!!


Cocoa Brownies

1/2 cup all-purpose flour
1/2 cup unsweetened cocoa
1/4 tsp. baking powder
1/4 tsp.salt (I don't put any salt because my butter is salted)
6 Tbsp. (85 grams) butter
1 cup sugar
2 large eggs
2 tsp. vanilla extract

Preheat oven to 350 degress F / 180 degress C. Grease 8" by 8" metal baking pan.
In a bowl combine flour, cocoa, baking powder and salt.
In a saucepan, melt butter on low. Remove saucepan from heat; with spatula, stir in sugar, then eggs 1 at a time and vanilla until well blended.
Stir in flour mixture.
Spread batter in prepared pan; sprinkle with chocolate chips if using.
Bake 18-20 minutes or until toothpick inserted into brownies 2 inches from center comes out almost clean. Cool brownies completely (this step is impossible in my household!!).
When cool, cut brownies into 4 strips, then cut each strip crosswise into 4 squares.

Each brownie - About 120 calories
