tuna sandwiches

Hello!
Hope all is well!

I'm quite busy...my daughter Mia is having her First Communion this Sunday and we're having family over so I have lots of preparations and cleaning to do (so I'm taking a bit of a break from Jane's Doodles)....yesterday I made tuna sandwiches for me and my husband and I thought I'd share this recipe. I didn't come up with it on my own but I can't remember where I found it (on line some where). It caught my eye because with only one can of tuna (they're pretty expensive right?) you can feed a crowd. And also I never heard of using fennel in a tuna sandwich!!

So you'll need:

tuna
mayo
onions (I used spring onions)
salt
pepper
fennel



Fennel is what makes one can of tuna go a long way!! So grate the fennel and really squeeze the liquid out. Chop the onions, salt and pepper to taste, add some mayo (I don't like too much...just enough so it holds all the ingredients together). I also threw in some hemp seeds and added some lettuce when I assembled the sandwiches. So you can add as much, onion, mayo etc. as you like/prefer but let me tell you it's sooooo good and easy!
